Ingredients
4 hard-boiled eggs (peeled and sliced into halves, lengthwise)
2 tbl of Hellmann’s Low Fat (formerly Reduced Fat) mayonnaise
½ tsp of dry mustard
¼ tsp of paprika
salt to taste (optional)
ground black pepper to taste (optional)
Directions
Cool boiled eggs in cold water before peeling and slicing. Remove yolks and place them in a small bowl.
Mash yolks with forks. Add paprika, mustard and optional salt and pepper. Add mayonnaise and mix well. Heap the mixed yolks into the egg whites. Cover with plastic wrap and refrigerate before serving.
Serving Suggestions
As a garnish, top each egg with an olive, pimento or pepper slice.
