Portion -  7 large shrimp
Recipe Serves four

Ingredients

28 large shrimp (26 – 30 count), 7 shrimp per serving, cleaned, de-veined and patted dry

1 tbl olive oil

1 cup of diced onions

2 tbls finely minced green bell pepper

2 – 14.5 oz cans of sliced stewed tomatoes, mashed

2 tbl minced garlic

1 bay leaf

1 tbl parseley

dash of cayenne pepper to taste

dash of crushed red peppers to taste

dash of hot sauce to taste

Salt to taste

ground black pepper to taste

1 tbl splenda no calorie sweetner

1 tbl corn starch blended with ½ tbl of cold water

Directions

In large sauce pan over low heat, cover and simmer mashed tomatoes. Add Salt and ground black pepper to taste.

Preheat a medium (8” to 10”) sauce pan. Add oil. Add onions, bell pepper and garlic to heated oil. Saute these ingredients over low heat until tender, for about five minutes.

Add shrimp and sauté for about five minutes, turning to cook on both sides until pink. Remove shrimp from pan and set aside. Add sautéed onion, peppers and garlic to simmering tomatoes.

Add the bay leaf, parseley, cayenne, crushed red peppers, hot sauce and splenda to tomatoes. Add the blended corn starch to tomatoes and stir. Simmer for 20 minutes. Add shrimp and stir. Remove from heat and serve.

Serving Suggestions

Serve with white rice. Add in additional calories.
