![]() Potato Salad Total Calories per Serving: 183 Fat Calories per Serving: 50 Percent Fat Calories per Serving: 27.32% Portion - 1 cup 1 - 1 cup serving Ingredients 1 average (5.25 oz. max.) white potato, peeled and diced to just under 1/2 inch cubes1 tbl Hellman's light mayonnaise 1 tbl finely chopped onion 1 tbl finely chopped celery 1/4 boiled egg, chopped 1 tbl sweet mixed pickles, finely chopped 1/3 tsp sweet pickle juice brine 1/3 tsp yellow mustard tsp each of green and/or red pepper, finely chopped (optional) dash of paprika for garnish (optional) tomato slice or wedge for garnish (optional) boiled egg, slice for garnish (optional)
Directions Rinse the egg and boil with the potato in a small sauce pan. Bring potato to a boil with med-hi heat for 20 to 30 minutes, until you can smash a sample potato with a fork with slight force.When done, drain the potato and egg in a colander. Rinse with cold water. Remove potatoes to a small mixing bowl. Add the onions, celery, eggs, pickles, green pepper (optional), Mix lightly. Add salt, pepper and yellow mustard. Mix lightly. Add mayonnaise and mix until the potatoes are completely covered. Add a couple of drops of the pickle brine and mixed lightly. Serve with choice of optional garnishes.
