Recipe Serves four
Ingredients
16 oz of skinless chicken breasts, fillets or tenderloins (4 oz per serving)
4 tbls of flour
2 tbls of olive oil
½ to 1 tsp of curry powder
1 medium onion, sliced
1 cup of mushroom bits
Table salt to taste
Ground black pepper to taste
¼ tsp of ginger powder
2 cups of hot water
Directions
Preheat a large stainless skillet over medium heat. Add oil. Add chicken and season in the pan. Brown the chicken on all sides. Remove browned chicken from skillet. Add onions and mushrooms. Turn occasionally to brown thoroughly. Cover with a tight lid.
Sprinkle flour over browned onions and mushrooms and stir. Start to add water slowly, alternately adding water while stirring in with the flour and onions.
Add 1 cup of the water. Save the rest of the water to add if the gravy becomes too thick before the chicken is finished cooking.
Add the curry, ginger, and salt and pepper to the gravy. Lower heat to a simmer and cover tightly. Simmer on low for 20 to 30 minutes. Add more water as needed. Remove from heat when done.

Serve with rice. Add in additional calories.
