Sweet and Sour Meatballs

Recipe serves five

Ingredients

12 oz lean (90% lean or more) ground beef

4 thin slices of yellow or red onions, finely chopped

1 thin slice of green pepper, finely chopped (optional)

2 1/2 slices of toasted, light whole wheat bread (40 calories per slice), crumbled into bread crumbs

1 large egg

1 tsp of dried parseley

2 tsps of garlic powder

salt and pepper to taste (Salt is optional. Add in sodium mg to total)

7 oz jar of Sweet and Sour Cooking Sauce (Asian brand)

Directions

In a medium bowl mix ground beef, bread crumbs, parseley, garlic powder salt and pepper, egg, optional green peppers and finely chopped onions. Mix well and form small bite-size meatballs (should yield about 25 meatballs).

Preheat a medium nonstick skillet (8 to 10 inches) over medium heat. Reduce heat to low and add the meatballs. Slowly brown meatballs on all sides, turning frequently.

Once the meatballs are completely browned, add sweet and sour sauce. Cover and simmer on low for 20 minutes, turning meatballs frequently.
