Ingredients
Eight slices of light whole wheat bread (40 calories per slice)
4 oz, Perdue boneless, skinless, Tenderlions
blast of cooking spray
6 tbl Hellmann’s Low Fat (formerly Reduced Fat) Mayonnaise
¼ cup diced celery
½ hard boiled egg, diced
1 tbl shredded carrots
2 tbl diced onions
Salt to taste
Ground black pepper to taste
Directions
Preheat a small non stick skillet or griddle. Spray with cooking spray. Season chicken with salt and pepper then grill on both sides until done, about ten to fifteen minutes total cooking time. Cut chicken into small cubes. Place in refrigerator to cool.
Mix all ingredients in a medium mixing bowl, adding 2 tbls of mayonnaise last. Mix mayonnaise in thoroughly. Chill in refrigerator before serving.
Construct sandwich by spreading 1 tbl of mayonnaise on one slice of bread, lettuce and tomato.
