Ingredients
3 oz dry, elbow macaroni
4 oz, Perdue boneless, skinless, Tenderlions
blast of cooking spray
4 tbl Hellmann’s Low Fat (formerly Reduced Fat) Mayonnaise
¼ cup diced celery
1 hard boiled egg, diced
1 to 2 tbls shredded carrots (to taste)
2 tbl diced onions
1 tbl finely diced green pepper
Salt to taste
Ground black pepper to taste
Directions
Place elbows in a pot of rapidly boiling water. Boil for 9 minutes, then remove to a colander. Rinse with cold water and set aside to drain and cool.
Preheat a small non stick skillet or griddle. Spray with cooking spray. Season chicken with salt and pepper then grill on both sides until done, about ten to fifteen minutes total cooking time. Cut chicken into small cubes. Place in refrigerator to cool.
Mix all ingredients in a medium mixing bowl, adding mayonnaise last. Add salt and pepper if desired. Mix mayonnaise in thoroughly. Chill in refrigerator before serving.
