Ingredients
10 oz package of frozen whole kernel sweet corn
2 cups of 2% milk
4 tbls butter
2 tbsl cornstarch
2 tsps Splenda no calorie sweetner
1 cup of fresh water
Salt to taste
Ground black pepper to taste
Directions
In a medium stainless saucepan, slowly bring milk to a simmer. Mix cornstarch with 3 tbls of cold water. Add cornstarch mixture to milk and stir. Add butter, salt and pepper, Splenda and stir.
Add corn and cover tightly. Simmer on low for 45 minutes, but check and stir frequently to make sure the thickening ingredients don’t stick to the pot. Add water a little at a time if needed to keep the mixture from becoming too thick too fast.
With a potato masher, crush the corn kernels. This may take moderate effort to get those kernels to loosen up. Continue cooking on low for another 15 to 30 minutes, stirring frequently and adding more water if necessary. Remove from heat and serve.
