Tuna Sandwich on Sandwich Thin

Portion -  3 oz tuna
Recipe serves two

Ingredients

2 Sandwich Thins (Arnold’s, Pepperidge Farm or equivalent)

6 oz can of tuna in water

1 tbl of finely chopped yellow onions

1 tbl of finely chopped celery

½ tbl finely chopped sweet mixed pickles

2 tbl of chopped hard boiled egg

4 tbls of Hellmann’s light mayonnaise (reserve 2 tbls for 2 sandwich thins)

1 small lettuce leaf

1 tomato slice

Salt to taste (optional)

Ground black pepper to taste

Directions

Mix, tuna, eggs, onions, pickles, celery, salt and pepper in small bowl with 2 tbls of mayonnaise.

Spread 1 tbl of mayonnaise on bread side facing the lettuce and tomato. Construct sandwich adding lettuce and tomato.
