Egg Salad Sandwich

Portion -  1 sandwich
Recipe serves two

Ingredients

2 hard boiled eggs with yolks

2 hard boiled eggs with yolks removed

4 tbls Hellmann’s Reduced Fat Mayonnaise

Couple of drops of sweet mixed pickles juice (optional)

½ tsp of fresh chopped parseley

4 slices of Light Wheat Bread (40 calories per slice)

2 tomato slices

2 lettuce leaves

Directions

Chop eggs and place in a small bowl. Add parseley and pickle juice. Mix thoroughly with 2 tbls of mayonnaise. Chill in refrigerator.

Spread 1 tbl of mayonnaise (optional) on bread slice facing lettuce and tomato and lettuce. Assemble sandwich.
