Recipe serves two
Ingredients
8 oz of thin sliced veal leg for scallopine (pounded with meat mallet to tenderize)
1 cup Italian flavored bread crumbs
3 egg whites
1 cup of spaghetti sauce mixed with ¼ cup of water
2 oz shredded low moisture- part-skim mozzarella cheese (80 cals per oz)
Cooking Spray
½ tbl minced garlic
1 tsp of freshly chopped parseley
Table salt to taste
Ground black pepper to taste
Directions
Preheat oven to 375 degrees. Spray an aluminum pan with a heavy coat of cooking spray. Place egg whites into a small container. Season veal with salt and pepper. Place veal slices in egg mixture and saturate thoroughly.
Dredge veal through bread crumbs. Cover thoroughly on both sides. Place veal slices in aluminum pan. Place in oven for five to seven minutes. Turn and bake for an additional five to seven minutes. Remove from oven when both sides are browned.
Distribute mozzarella on the tops of the veal.
Lightly spray a medium saucepan with cooking spray. Over low heat, add minced garlic and lightly brown garlic Add sauce. Add parseley and salt and pepper if desired.
Cover and bring to a low simmer. Add veal. Simmer on low for ten minutes. Remove from heat and serve.
