Ingredients
1 Cumberland Gap or Bob Evans 97% fat free ham steak, diced
3 thin onion slices, finely diced
1 – 10 oz box of frozen grade A fancy or sweet corn
4 medium potatoes (5.25 oz each) – diced into small pieces
3 cups of 2% milk
2 tbls of butter
1 tbl of Splenda no calorie sweetner
2 bay leafs
3 cups of water
2 tbls of cornstarch
Salt to taste
Pepper to taste
Pinch of dried thyme
Directions
Bring 3 cups of milk to a slow simmer over low heat. Add butter, corn and onions. Cover tightly and simmer on low for 30 minutes. Add salt, pepper, Splenda and bay leaf. Mix 1 tbl of cornstarch with a quarter cup of cold water and add to pot and stir.
Mash corn with a potato masher. Mashing the corn is optional, but the soup will be creamier if you mash it. Simmer for 15 minutes. Add 3 cups of water and another ¼ cup of cold water mixed with 1 tbl of cornstarch. Stir.
Add thyme, diced ham and diced potatoes. Cover tightly. Simmer for another 30 minutes or until the potatoes are soft.
