Garlic and Onion Potatoes

Recipe serves four
Ingredients
10.5 oz of white potatoes sliced 1/8 inch thin (approx. 2 medium, narrow potatoes)
1 cup of 2% milk
½ tbl corn starch (mix with milk)
2 tbl water
1 tbl butter
½ tbl of chopped parseley
1 tsp of chopped or minced garlic
2 slices of onion, finely diced
½ tbl of bacon bits (optional)
1 tsp bread crumbs (optional)
salt to taste
ground black pepper to taste
Directions
Preheat small (8”) nonstick saucepan over medium heat. Add butter. Add onions to sizzling butter and heat until slightly translucent. Add garlic and stir. Heat onions and garlic for another minute or two. Reduce heat. Blend corn starch with milk.
Add cornstarch and milk mixture to pan and stir in with onions and garlic. Add potatoes, salt, pepper and water. Cover and simmer on low for about 20 minutes. Look in on potatoes frequently and turn in pan.
Add parseley and bacon bits and mix with potatoes and sauce. Sprinkle bread crumbs over potatoes if desired. Continue to simmer until potatoes are nice and tender. Remove from heat and serve.
