Cream of Broccoli and Cheese Soup

Portion -  2 cups
Recipe serves four


4 cups of 2% milk

½ cup of onions finely diced

1 celery stalk, finely chopped

1 package of powdered beef boullion

3 cups of water ( 1 cup blended with corn starch )

4 cups of fresh, finely chopped broccoli crowns

3 tbls of corn starch

3 oz of shredded cheddar cheese, mild or sharp

salt to taste

ground black pepper to taste


Total cooking time is approximately one hour and 15 minutes..

Slowly heat milk in a large saucepan. Add celery, onions, boullion, broccoli, salt and pepper to simmering milk. Mix thoroughly. Add two cups of water. Cover and simmer on low for about 30 minutes.

Add the 1 cup of water with corn starch mixture. Add cheese and stir well. Continue to simmer, covered, on low for about another 30 minutes. Check frequently and stir. If soup is too thick add water, a ¼ cup at a time.

Soup is done when broccoli is mushy and cheese is thoroughly blended.
