Ingredients
4 small, narrow, sweet potatoes (yams), sliced into ¼ inch slices (16 ounces total)
4 tbls butter
6 tbls of Splenda no calorie sweetner
1 tsp vanilla extract
¼ tsp nutmeg
Directions
Preheat small nonstick skillet over low heat. Add butter. When butter is sizzling, add Splenda and mix well with butter. Add vanilla extract and mix with butter and Splenda.
Add sweet potatoes and mix well with butter and Splenda mixture. Add water.
Sprinkle nutmeg over potatoes.
Lower heat to very low and cover tightly. Simmer on low for 20 to 30 minutes, checking frequently and turning and mixing well often until sweet potatoes are tender.
