Lobster Sauce with Pasta

1/2 lobster tail
Recipe serves four
Ingredients
8 oz lobster tail
8 oz pasta of choice (linguini, spaghetti, fettucine etc)
½ tbl butter
4 tbls of finely chopped onions
2 tsp chopped or minced garlic
1 cup 2% milk
2 tbl cornstarch
8 oz clam juice
1 tbl tomato paste
1 tsp parseley flakes
pinch of basil
salt to taste
ground black pepper to taste
Directions
Boil pasta according to package directions. Remove lobster tails from shell, rinse and pat dry. Cut lobster into 2” chunks. Heat a medium skillet over low heat, then, add butter. Add onions, garlic and lobster and sauté for about three minutes.
Remove lobster and cut into smaller pieces. Add cornstarch to milk and mix thoroughly. Add mixture to pan and stir. When mixture begins to thicken, add clam sauce.
When mixture begins to thicken again, add tomato paste and mix thoroughly. Add parseley, basil, salt and pepper and stir. Add lobster and cover. Simmer for 3 minutes. Remove from heat and serve with pasta of your choice.
