Ingredients
Prepare Italian turkey sausage
15 oz Perdue or Shady Brook Farms, 97% fat free, ground turkey (or equivalent)
olive oil cooking spray
1 tbl ground sage
2 egg whites
2 slices of lite whole wheat bread (40 cals per slice) crumbled into fine bread crumbs
1 tsp dried oregano
¼ tsp thyme
½ tbl parseley
½ tsp onion flakes or dried, chopped onion
tbl finely chopped green bell pepper (optional)
salt to taste
Prepare Sandwich
3 large onion slices
olive oil cooking spray
6” Italian hero roll
16 OreIda shoestring French fries, baked
ketchup to taste
mustard to taste
Directions
Preheat oven to 450 degrees. Spray pan with cooking spray.
For sausage, mix all ingredients thoroughly. Form four large oblong patties, about five to six inches long. Place patties in pan and bake in oven for 20 to 25 minutes. Turn while baking to brown on all sides.
Reduce oven to 400 degrees. Spray a separate pan with cooking spray. Place onion slices in pan. Place sausage in pan.
Heat in oven until onions are tender. At the same time, place french fries in a separate pan and heat for 10 minutes. Remove onions, sausage and french fries from oven.
Place mustard on the bottom of an open roll. Place sausage in roll, with onions and the french fries on top. Add ketchup and serve.
