Shrimp and Scallops Salsa
Total Calories per Serving:   278

Portion -  10 large shrimp
Serves two

Ingredients

10 large shrimp (26-30 count)

2 oz. small bay or sea scallops

1 tbl olive oil

1 scallion chopped

6 tbls of petite diced tomatoes

2 tbls of finely diced green peppers (optional)

1 tbl of parseley flakes

1 tsp of minced or chopped garlic

Salt to taste (optional)

Pepper to taste

Directions

Preheat small skillet over medium heat. Add oil. When oil is hot, add scallions, garlic and green peppers. When oil begins to sizzle, add shrimp and scallops.

Cook for three minutes on each side until shrimp is pink and scallops are translucent. Remove shrimp and scallops when done.

Add diced tomatoes in pan. Add salt, pepper and parseley. Simmer for five minutes. Add back Shrimp and Scallops and mix. Remove from heat.

Serving Suggestions

Serve with a cup of rice or a serving of linguini. Add in extra calories.
