Yellow Rice and Garlic Chicken

Ingredients
Goya yellow rice 8 oz packet
3 boneless chicken tender fillets (about 3 oz total)
2 slices of yellow onions, chopped
1/4 cup of peas and carrots
1/2 tbl of chopped or minced garlic
2 tbl of fresh chopped parseley
1 tsp salt
1 tsp ground black pepper
Directions
In a separate small saucepan, boil peas and carrots for 10 minutes or until tender. Set aside.
Prepare yellow rice according to box directions, minus adding butter or oil. Set aside.
Cut fillets into ½ inch cubes. Season chicken with salt and pepper. In 6 to 8 inch pan, over medium heat, heat olive oil. Add onions and simmer for about 2 minutes.
Add garlic Let garlic begin to brown, then, add the parseley and chicken fillets, still on medium heat.
Cook for 10 minutes then turn. Cook for another 10 minutes. Add the chicken and peas and carrots to the rice. Mix well but do not overwork the rice.
