Ingredients
3 – 6.5 oz cans of minced clams in juice (drained)
½ cup of reserve clam juice (from clams)
8 oz bottle clam juice
½ cup of vegetable stock
1 tbl butter (in halves)
½ tbl extra virgin olive oil
¼ tsp of crushed red peppers
½ tsp minced garlic
1/4 cup chopped shallots
½ tsp dried oregano
1 tsp dried parseley (or fresh parseley)
salt to taste
ground black pepper to taste
Directions
Heat olive oil and ½ tbl of butter in a medium skillet over medium heat. Add shallots and garlic for 2 minutes until tender.
Add clam juice, reserve claim juice, vegetable stock, remaining butter, oregano, parseley, salt, ground black pepper and crushed red peppers. Simmer on medium heat for 15 minutes.
Add clams and reduce heat to low. Simmer for 3 minutes.
Serving Suggestions
Serving suggestion : Serve with 2 oz (dry), cooked linguini and reduced fat grated parmesan cheese. Add additional calories.
