Eggplant Parmesan

Serves six, two rounds each

Ingredients

2 large eggplants, sliced into 12 - 1/2 inch rounds (total max weight = 2 lbs)

1/2 cup of italian seasoned bread crumbs

2 beaten eggs

1/2 tbl olive oil

3 slices of onion, chopped

1/2 tbl minced garlic

1 - 24 oz jar of spaghetti sauce + 1/4 cup of water added

1 tbl dried basil leaves

2 cups (1 - 8 oz bag) part skim shredded mozzarella cheese

1 cup of reduced fat parmesan

Directions

Preheat oven to 350 degrees . Place bread crumbs in a small bowl or container. In a small bowl or container, beat two eggs. Cover a large cookie sheet with aluminum foil.

Take a round of eggplant, dip it into the beaten egg until fully covered, and then drag through the bread crumbs until completely coated; transfer to cookie sheet. Repeat for each round of eggplant and then bake in oven for 15 minutes on each side.

While eggplant is baking, heat olive oil in a large saucepan over medium-high heat. Add onion and garlic and saute until soft, about 1 1/2 minutes. Add jar of spaghetti sauce and ¼ cup of water. Add basil and stir.

Lower heat and simmer for 10 minutes. Remove eggplant from oven when done. Reduce the oven heat to 300 degrees. Ladle a thin layer of sauce on the bottom of a 13” by 9” Pyrex dish. Place 6 of the eggplant rounds in the dish.

Ladle tomato sauce over the eggplant. Top with the mozzarella, then the parmesan cheeses. Layer the last 6 eggplant rounds, add sauce and cheeses as before. Bake for 20 minutes until cheese is soft and bubbly.

Remove from oven and let stand for 5 minutes before serving.
