Seared Scallops in Homemade Duck Sauce

Serves two
Ingredients
4 large sea scallops – about 2 oz each
1 tbl olive oil
1 diced scallion
1 tsp chopped garlic
2 tsp soy or teriyaki sauce
4 tbl of duck sauce (recipe below)
Apricot preserves 2 tbl sugar free (Splenda substitute)
Peach preserves 2 tbl sugar free (Splenda substitute)
1 tsp crushed pineapple sweetened with Splenda
1 tsp crushed pineapple reserve juice
1 tiny drop of hot mustard (the size of a ballpoint pen tip)
1 small drop of soy sauce (one eyedropper, drop)
Directions
Heat oil over medium-high heat. Heat until oil is sizzling hot. Add scallions and garlic and cook until tender. Add scallops and season to taste. Cook two minutes until the top is seared golden, then flip and cook for another two minutes.
Add soy (or teriyaki) sauce, homemade duck sauce (see recipe below), and the peas and carrots. Cook another two minutes until the scallops have a opaque color.
Directions for Duck Sauce
Duck Sauce – ½ cup
In a ½ cup measuring cup, add soy sauce and hot mustard. Then add the rest of the ingredients and mix well.
