Chicken Marsala (4 oz. Chicken) Total Calories per Serving: 363 Fat Calories per Serving: 125 Percent Fat Calories per Serving: 34.44% Portion - 4 oz. chicken fillets two servings (4 oz chicken cutlet per serving) Ingredients 8 oz - ¼ inch thick, boneless, chicken breast fillets (4 oz serving each). You can either purchase flat chicken fillets, or you can slice a boneless chicken breast, depth-wise into thin flat pieces.¼ cup all-purpose flour 1 tbl olive oil 1 tbl butter 1 cup mushrooms (optional) 1 cup Marsala cooking wine (supermarket brands such as Holland House or Pompeian can be found in the Condiments aisle) 1 cup chicken stock 1/2 tsp Worcestershire sauce 2 tbl shallots, finely chopped salt to taste ground black pepper to taste
Directions Preheat stainless skillet over medium heat. Add Oil and heat until sizzling hot. Season chicken. Add chicken fillets to sizzling oil. Lower heat. Brown chicken on both sides, about 3 to 4 minutes each. Remove browned chicken.Reduce heat in pan and add butter. Add Worcestershire sauce, shallots and optional mushrooms. Simmer for four minutes. Add Marsala. Simmer for 1 minute. Add Chicken stock. Simmer for 1 minute. Add chicken and cover with sauce on both sides. Cover with lid, and simmer for 5 minutes.
Serving Suggestions Serve with 1 cup of egg noodles, 1 potato or a cup of rice. Add in additional calories.
