3 oz beef cubes, 4 carrots, 5 mushroom slices
Serves two (3 oz beef cubes per serving)
Ingredients
1 slice bacon
6 oz. beef cubes
¼ cup tbl flour
1/2 can of beef broth
1/4 cup of burgundy (supermarket brands such as Holland House or Pompeian can be found in the Condiments aisle)
8 baby carrots cut in half
1/2 onion cut into wedges
1/4 clove of garlic, crushed
¼ cup of diced mushrooms (mushroom bits)
salt to taste
pepper to taste
a pinch of thyme
Directions
Heat small stainless skillet over medium heat. Cook bacon until crisp. Crumple bacon into bits and set aside. Season meat with salt and pepper. Dredge meat in flour. Lower heat under pan. Add meat and onions. Brown meat on all sides.
When browning is almost complete, add back the bacon, add the mushrooms. Cover and continue to brown meat. When the meat is brown and the onions and mushrooms are sautéed, add broth, wine, carrots and thyme.
Bring to high simmer. Reduce heat to very low. Cover and simmer for an 1 ½ to 2 hours until meat is very tender. If gravy becomes too thick before the cooking time is complete, add a few drops of water and stir.
Serving Suggestions
Serve with noodles, low-fat mashed potatoes or rice.
