Ingredients
6 cups of fresh water
3 oz. lean beef cubes, diced into ½ inch, bite-sized pieces
1 cup of soup vegetables
½ cup of dried barley
½ cup of petite diced tomatoes
¼ onion, diced or wedged
1 cup of beef broth
Salt to taste
Ground black pepper to taste
Directions
Over medium heat cook beef cubes for ½ hour. If necessary, remove meat to colander and rinse off residue. Rinse residue from pot. In the clean pot over medium heat, add six cups of fresh water.
Add meat, salt, pepper, celery, onions, tomatoes and beef broth.
Cook for 1 to 1 1/2 hours until the meat is tender. Add barley and cook for 20 minutes. Add soup vegetables and cook for 15 to 20 minutes.
Serving Suggestions
Serve with croutons. Add in extra calories.
