Ingredients
1 - 8 oz box of Goya Spanish Style Yellow Rice
¼ cup of frozen peas and carrots
three slices of yellow onion, chopped
1 tbl of olive oil
Directions
In a medium saucepan, bring 2 cups o water to a boil. Add contents of rice packet and peas and carrots. (do not add oil or butter) Boil for 1 minute. Cover, and reduce heat to very low. Cook for 25 minutes or until water is absorbed. Remove from heat.
In a small skillet, add olive oil over medium hear and heat until oil is hot. Add onions and sauté until translucent. When done, add to pot of rice and stir.
Serving Suggestions
Add a cup of chopped boneless, skinless chicken breast. Add in extra calories.
Serve with seafood. Add in extra calories.
