3 oz beef, 4 oz vegetables
Serves two
Ingredients
½ tsp peanut oil or olive oil
6 oz beef strips sliced 1/4 inch wide and about 3 " long
8 oz packaged stir fry vegetables (broccoli, carrots and sno peas)
½ onion diced, or 1 scallion diced
1 tsp minced garlic
1 tbl soy or teriyaki sauce (optional)
¼ cup water chestnuts
¼ cup mushrooms
1 tbl water
Directions
Preheat medium skillet over medium heat. Add oil and heat for one minute. Add onions/scallions and garlic. Cook for two minutes. Add meat and brown on both sides.
When meat is browned, push to one side of the pan. Lower heat to low. Add mushrooms, water chestnuts and the carrots slices from the stir fry vegetables.
Cover tightly and simmer for five minutes. Add water, broccoli and snow peas. Pile meat on top of the vegetables and cover again. Simmer on very low heat for ten minutes or until your desired crispness for the vegetables.
Add teriyaki or soy sauce and mix in pan. Remove from heat and serve.
