Turkey Gumbo Soup

Portion -  2 cups
Serves four

Ingredients

8 ounces of mixed white and dark meat turkey

1 cup onions, diced

½ cup celery, diced

1 bay leaves

2 cups soup vegetables

1 cup cut okra

1 - 14.5 oz can Petite diced tomatoes

2 cups vegetable stock

1/2 cup of dry rice

Salt to taste

Ground black pepper

6 cups of fresh water

Directions

In a large pot, add, water, salt, pepper, tomatoes, vegetable stock, onions, celery and bay leaves. Bring to a boil over medium high heat. Reduce heat to medium.

Add turkey, soup vegetables and okra. When the pot begins to simmer, add rice and simmer for 15 to 20 minutes. Check rice for firmness. Remove from heat.
