Garlic Chicken, Water Chestnuts and Rice

Portion -
3 oz chicken, 1 cup of rice
Recipe serves three
Ingredients
9 oz of boneless, skinless, chicken breast fillets, cubed into 1 inch pieces
1 tbl of olive oil
1 cup of sliced water chestnuts
1 cup of sliced mushrooms
¼ cup of onions, diced
1 tsp of minced garlic
3 cups of cooked white rice.
ground black pepper to taste
salt to taste
Directions
In a medium stainless pan, heat oil over medium heat. In heated oil, add onions and garlic. When onions begin to turn translucent, turn up heat to medium high and add chicken.
Brown chicken on both sides. Add mushrooms and water chestnuts in pan and mix well with chicken, onions and garlic. Lower heat to very low and cover pan. Simmer for ten minutes, turning ingredients frequently.
Remove from heat and serve with soy or teriyaki sauce and one cup of white rice.
