3 oz veal scallopine
Recipe serves two
Ingredients
6 oz sliced veal leg for scallopine
¼ cup all-purpose flour
1 tbl olive oil
1 tbl butter
1 cup mushrooms (optional)
1 cup Marsala cooking wine (supermarket brands such as Holland House or Pompeian can be found in the Condiments aisle)
1 cup beef stock
1/2 tsp Worcestershire sauce
2 tbl shallots, finely chopped
ground black pepper to taste
salt to taste (optional, the cooking wine and stock may adequate sodium)
Directions
Season veal with optional salt and pepper. Dredge veal through flour. Heat oil in a small stainless skillet over medium high heat. Add oil and heat until sizzling hot.
Place veal in skillet in sizzling hot oil. Brown on both sides, about 5 minutes each. Remove browned veal.
Reduce heat in pan and add butter. Add Worcestershire sauce, shallots and optional mushrooms. Simmer for four minutes.
Add Marsala. Simmer for 1 minute. Add beef stock. Simmer for 1 minute. Add veal and cover with sauce on both sides. Cover with lid, and simmer on very low for about 30 minutes, until veal is tender and sauce is thickened.
