Recipe serves two
Ingredients
14 large shrimp (26-30 count), shells removed, de-veined and cleaned
½ tbl of peanut oil
1/3 cup of diced onion, scallions or shallots
½ tsp of minced garlic
¼ cup of frozen peas and carrots
2 cups of cooked rice (usually, 1/2 cup dry rice to 1 cup of water)
1 tbl of soy or teriyaki sauce
½ tbl of dried, chopped parseley
Directions
Boil peas and carrots for 10 minutes. Remove from heat to a colander or strainer. Set aside.
Cook rice according to package instructions. Or, boil 1 cup of water. Add salt and pepper if desired. Add rice to boiling water. Cover rice and reduce heat. Simmer on low for about 15 minutes until all water is evaporated. Do not add butter or oil.
In a small pan or wok, heat oil over medium heat. Add onions and garlic to hot oil. Reduce heat and cook for 2 minutes. Add shrimp. Cook shrimp on each side for 2 minutes.
Add parseley, peas and carrots and mix well with shrimp, onions and garlic. Add rice and soy or teriyaki sauce. Mix well.
Serving Suggestions
Serve with the Carb Lovers sugar free duck sauce. Add in extra calories.
