Lamb Kabob

Portion -  3 oz of lamb meat
Recipe serves two

Ingredients

6 oz boneless leg of lamb cut into 6 – 1 oz cubes ( 3 cubes each serving)

1 tbl olive oil

½ tsp worcestershire sauce

1/3 cup of white cooking wine

½ cup of vegetable stock

1 bay leaf

½ tsp of oregano

1 pinch of thyme

table salt to taste (optional)

ground black pepper to taste

6 med. cherry tomatoes

6 button mushroom, stems trimmed off

4 – 1 inch wedges of red (or white) onions

4 – 1 ½” to 2” wedges of green bell pepper

10” wooden skewers, immersed in water for 20 minutes just prior to using

Directions

Preheat broiler to 450 degrees.

Prepare marinade: In a small bowl, combine the olive oil, garlic, worcestershire, wine, stock, bay leaf, oregano, thyme, optional salt and ground black pepper. Mix well.

Place lamb, tomatoes, mushrooms, onions and bell pepper in the marinade. Cover tightly and place in refrigerator and marinate over night.

Thread lamb, tomato, onion, pepper, and mushroom on the skewer. Repeat. Then add another piece of lamb and end with tomato. Pour some of the marinade over the meat and vegetables and place under broiler.

Broil for 5 to 10 minutes depending on desired doneness. Turn to other side, and pour marinade over meat and vegetables again. Broil again for 5 to 10 minutes. Removes from heat and serve.

Serving Suggestions

Serve with the rice of your choice. Add in additional calories.
