Lobster Bisque Soup

Portion -  2 cups
Recipe serves three

Ingredients

2 medium lobster tails (6 oz total after refuse is removed), patted dry, back skin removed and coarsely chopped

½ cup onions, finely minced

½ cup celery, finely minced

¼ cup finely grated carrots

27.5 oz can of Sea Clam Juice, heated

2 cups 2% milk, heated

2 cups water, heated

2 tbl butter

4 tsp minced garlic

5 tbl all purpose flour

2 tbl tomato paste

2 tbl fresh parseley, finely chopped

1 bay leaf

tiny pinch of thyme

ground black pepper to taste

salt to taste (optional as the Sea Clam Juice is loaded with sodium)

Directions

Preheat small skillet. Add ½ tbl of butter. Add 1 tsp of garlic to heated butter, and add a sprinkle of parseley. Add chopped lobster. Saute for 2 minutes. Remove from heat and set aside.

Preheat large saucepan over medium heat. Melt remaining butter. Saute onions, celery and remaining garlic in butter for about 2 to 3 minutes, until translucent.

Start adding the flour by spreading one tbl at a time over the onions and celery, and stirring to blend, often. Add a couple of tbls of the heated clam juice and blend after each time you add flour to help keep the paste smooth.

When you have added all of the flour, you will have a smooth paste. Slowly add the remainder of the clam juice a little at a time, stirring as you pour to maintain the smoothness of the paste until it liquefies.

Simmer for about five minutes over low heat to thicken. Add milk, ground black pepper, bay leaf, carrots, parseley and thyme. Stir and cover tightly.

Simmer for 5 minutes, then, add tomato paste and water. Cover tightly and simmer on low for 60 minutes or until grated carrots are completely dissolved .

Add lobster and stir. After five minutes, stir again, and remove from heat.
