Ingredients
1 lb skinless chicken breast tenderloins, cut into bite-size cubes
4 tbls peanut oil (or oil of your choice)
2 onion slices, chopped
1 clove garlic, diced
1 stalk of celery, chopped
1 cup of mushrooms, chopped
4 cups of bean sprouts
5 oz can of sliced water chestnuts
2 cups vegetable stock
2 tbls of corn starch
3 tbls of teriyaki sauce
1 tbl soy sauce
Directions
Preheat pan or wok over medium high heat. Add 2 tbls oil. When oil is very hot, add chicken and increase heat to hot. Brown chicken on both sides. Once chicken is lightly browned, push aside in pan. Add remaining 2 tbls of oil.
Add onion, celery, mushrooms and garlic. Add corn starch to vegetable stock and blend thoroughly. Once the vegetables are translucent, add vegetable stock mixture. Add bean sprouts and water chestnuts and reduce heat.
Stir all ingredients in pan. Reduce heat and simmer on low for 15 to 20 minutes until the sauce thickens. Add teriyaki and soy sauce and mix well. Remove from heat and serve.
Serving Suggestions
Serve with rice and/or chow mein noodles. Add in additional calories.
